As for my family and I, we will settle for fresh Sea Salt Baked Tillapia from Seattle instead. I am feeling a little salty from the air fare and missing out the wonderful seafood that I could otherwise get from Penanggggg...
Sea Salt Baked Tillapia
Recipe: Sea Salt Baked Tillapia
Ingredients:
2lbs fresh Tillapia fish (cleaned and scaled)
5 cloves garlic
1/2 onion
3 dried chili
1 stalk green onion
1 Tbsp chopped cilantro
2.5 lbs coarse sea salt
1 egg white
4 Tbsp water
Directions:
1. Line baking pan with aluminium foil. Preheat oven to 400F.
2. Clean and scale the fish, pat dry.
3. Lightly crush the garlic cloves and dried chili, and set aside. Julienne the onion and green onion. Toast them on a pan over medium heat until fragrant.
4. Stuff the fish evenly with garlic, chili, onion and green onion.
5. Lightly sprinkle with olive oil inside the fish.
6. Mix the egg, water and salt until blend. Set aside.
7. Spread 1/3 salt mixture on the prepared pan. Place fish on top of the bed of salt. Cover the fish completely with the remainder of salt mixture.
8. Bake fish at 400F on middle rack of oven for 20 minutes. You will not be able to test the doneness of the fish, so trust me in this.
9. When it is done baking, take the fish out of the oven and let rest for about ten minutes before serving.
Crack up that salt crust on dinner table to get the ohhs and ahhs from family and guests. Serve with a wedge of lemon if you like. Enjoy :)
And while I am in the mood, I added the famous Penang Char Kueh Teow. It is flat rice noodles with shrimp, geen onions, garlic, bean sprouts, minced sweet and salty radish fried over high heat.
Penang Char Kueh Teow
(Penang Fried Rice Noodle)
Recipe: Penang Char Kueh Teow
Ingredients:
2lbs Flat Rice Noodle
4oz bean sprouts
1/2 onion, julienne
3 stalks green onion, sliced about 1" long
3 cloves minced garlic
1/2lb unshelled shrimps
1/2 tsp salty radish, minced
1/2 tsp sweet radish, minced
2 Tbsp soy sauce
1 Tbsp sweet soy sauce (kecap manis)
1 Tbsp black soy sauce
Directions:
1. Heat oil in wok at high.
2. Add garlic, onion, sweet and salty radish to wok and stir fry until fragrant.
3. Cook shirmps and stir fry until pink
4. Add noodle, soy sauces, green onion and bean sprouts, and stir fry quickly until the noodles are cooked and well coated with sauce.
5. Serve with a smile...
